Kitchen Adventures: Garlic Basil Chicken

This is one of my FAVORITE recipes. When I cook this, I don't use measurements. It's so simple, you can just throw it together and bake! It's also super quick to prepare! It took me about 15 minutes to gather everything, and the chicken baked for an hour ;-).
Garlic Basil Chicken
Supplies:
Baking Dish (I prefer glass, but you can use a metal pan too)
Gloves or tongs for turning chicken
Basting Brush
Ingredients:
Garlic Seasoning
Basil
Rosemary
Nutmeg
Cinnamon
Extra Virgin Olive Oil
2 large chicken breasts (or 1 whole chicken)
Step 1: Drizzle olive oil in your baking dish.
Step 2: Rinse chicken & place in dish skin side, down
Step 3: Mix spices in a small bowl...
I add a dash of each into the bowl. The measurements should really be to your preference. I do equal amounts of everything, except the cinnamon. I add in about half a dash with those two.
If you absolutely must measure the spices, I would recommend 1/2 teaspoon of garlic, basil, & rosemary; 1/4 teaspoon of nutmeg and cinnamon.
Step 4: Sprinkle half the spice mixture all over the chicken. Then, turn it over with your tongs or a gloved hand, and sprinkle the remaining mixture all over the top.
Step 5: Cover your dish with aluminum foil
Step 6: Bake at 375 degrees for 1 hour.
Slice and place chicken on your plate. Using your basting brush, drizzle some of the juices from the pan on top of your chicken. Enjoy!
Cook's Notes:
If you use fresh garlic, basil, and/or rosemary, then you will want to chop it up very fine. I use nutmeg and cinnamon powder that I found at Aldi.
If you use a whole chicken, i recommend placing in the crock-pot to cook with (1) cup chicken broth & cook for 4-6 hours based on the weight of your chicken.
For this recipe, I paired Green Beans, Fresh Fruit, Home Made Bread, and home made strawberry freezer jam.
It also pairs well with grilled/broiled asparagus, mashed potatoes, mixed veggies, and peas.
