Banana Oat Smoothie for the Win!


Smoothies! Today was our first day of implementing smoothies into our diets! I have been noticing that even with the best preparation, our mornings still sometimes seem to go awry. I have been looking for ways to eat better and still feed my family healthy breakfasts... enter pinterest!

Recently while searching for healthy breakfasts, I came across a ton of information about juicing and smoothies. I knew what both were, but I had a vague knowledge of it. This week I decided to try it. On Sunday, I made out some new meal plans for the next two weeks to include healthy smoothies for breakfast... especially on our busy mornings.

$214 and 11 grocery bags later... I came home with a ton of fresh fruits & veggies, lean meats, and more for two weeks of healthy meals + snacks for each day.

Yesterday, we did our first smoothie, and it was a win! My kids absolutely loved it! We started off our new venture with a banana oat breakfast smoothie recipe that I found over on Running With Spoons. I wanted to start off with something that I thought would be really tasty so that my kids would be more apt to try the upcoming recipes that have greens in them. The banana oat breakfast smoothie was a total hit! They constantly asked for more throughout the day.

 

Here's the recipe if you'd like to try it for yourself...

The only supplies you'll need are a blender, measuring cups + spoons, a cup, and the ingredients!

Ingredients

  • 1/2 cup (115 g) yogurt or non-dairy yogurt of choice

  • 1 medium-size (100 g) ripe banana, frozen

  • 1/4 cup (60 ml) unsweetened almond milk

  • 1/3 cup (30 g) rolled oats*

  • 1 Tbsp (7g) chia seeds**

  • ½ tsp vanilla extract

  • pinch of salt (optional but recommended)

  • 1-2 tsp maple syrup or honey (optional, to taste)

Instructions

  • Add all the ingredients to a high-speed blender in the order listed, and blend on high until a smooth and creamy consistency is reached. You want to make sure to keep blending until the chia seeds have broken down to achieve the smoothest and creamiest texture.

  • This smoothie can be made the night before and left to thicken in the fridge overnight. It gets quite pudding-y, so feel free to stir in a splash of milk to achieve desired consistency.
