Blueberry Pineapple Smoothie


Today's recipe was well-received by the whole family! I must admit, I am a bit surprised at how much they've enjoyed all the healthy snacks we've been serving lately.

I personally enjoyed this recipe. We made two batches. The first without a banana, and the second with the banana added in. The first batch had a sort of tart/dry aftertaste. I still tasted pretty good, it was just different for my taste. I have an affinity for sweet things. That said, all in all, this recipe was great, and we'll definitely make it again!

Ingredients

  • 1/3 cup coconut milk

  • 1/2 cup plain Greek yogurt

  • 1/2 cup frozen blueberries

  • 1 cup fresh pineapple

  • 1 tbsp honey

  • 1 banana (optional - for sweetness)

  • 1 cup ice (optional)

Instructions

Add Greek yogurt, coconut milk, and honey to blender first. Then top with fresh fruits. Blend until smooth. Pour into a glass & top with a few blueberries, then enjoy!

This recipe was fun to make, and I hope you enjoy it as much as we did!
