This is one of our FAVORITE receipes to make at our house! It's sooooo yummy and delicious! A few weeks ago, it was my turn to host my ladies bible study group. We usually do appetizers, but this was a unanimous request from my friends. I've been making this recipe for years, and you won't be disappointed.
Ingredients:
Sauce
16 oz. heavy cream (approx).
1 stick butter
1 cup parmesan cheese (can use a bag or shred a block of fresh parmesan cheese)
Black Pepper
Your preference of italian seasonings - I prefer garlic, basil, and oregano.
Chicken
1 lb chicken breasts or tenders
Olive oil
Salt, Pepper, Italian Spices
Pasta
1-1.5 lb of your preferred style of noodles.
Instructions:
Chicken (start chicken first, as it usually takes the longest to cook).
Place your chicken in a skillet. Drizzle a little bit of olive oil on top (approx 2-3 tbs), and then sprinkle with salt, pepper, and preferred italian spices.
Cook over medium heat until cooked all the way through
Set to the side to rest until sauce is done.
Pasta (takes approx. 10-15 mins)
Bring approx 6 cups of water to a boil
Pour in your pasta noodles and cook to al-dente. (approx 3/4 the way cooked).
Strain noodles and place in serving bowl
Sauce (make while noodles are cooking - takes approx 15 minutes)
In a separate, large saucepan, start melting 1 stick of butter over medium heat.
When the butter is half-way melted, pour in 2/3 carton of heavy cream.
Add your pepper and spices to taste and stir. (I do not measure these out, personally, but for our family would be approx 1-2 tsp of each spice and a dash of garlic.)
Bring the sauce to a boil, stirring lightly to keep a crust from forming on the side of your pan.
Once boiling, turn the heat down to low.
Add in 1 cup of parmesan cheese, adding as much of the remaining cream as needed to thin the sauce to your preference.
Stir lightly & Simmer for 2-3 minutes or until the cheese is all melted in.
Remove from heat, and pour over pasta that's waiting in a serving dish.
Top with your chicken, then serve & enjoy!
I typically serve this meal with a salad & garlc bread. Our family likes to add a little kick to this, so we often will sprinkle a little McCormick Cajun Seasoning on top for a more low-country feel.
Enjoy!
